........okay.....if you were among the zero percent of readers who guessed Wagyu Beef you would have been right. This and other great food porn on Chicago chef Curtis Duffy's blog here. Formerly of Charlie Trotter's and Grant Achatz's Alinea, Curtis' restauarnt Avenues was also given a coveted four star rating from the Chicago Tribune.

My first thought was Wagyu, but then I decided not, because it can't be that fatty! Guess I was right the 1st time!
