I'd add fresh rubbed dry basil, dried red chile flakes in the clam stage, at least a cup of diced green onions, a full cup of wine (even try vermouth for a nice unctuous texture), and wild mushrooms. Finally, and the hardest thing to do, is DON'T eat it after you cook it. Wait till the next day, re-warm with more olive oil. You won't believe the flavor, because the pasta now as absorbed all the juices. Squeeze a lemon over your bowl of pasta, maybe some fresh chopped parsley, then parmesan. Totally to die for, and for die-hard clam fans, I dare you to eat for breakfast. Amazing.Anonymousnoreply@blogger.com
