Why is it so bright red? Gumbo should be dark brown and have some body to it. Brothy gumbo's are more for chicken and even those are dark brown. The best gumbo's around here use a very dark brown roux. Check out Mr.B's Bistro in New Orleans and get the Gumbo YaYa.
